This recipe was inspired by the book "Someone Name Eva." The story is set in Czechoslovakia (Czech Republic) during WWII. The main character is a young girl who is about to celebrate her birthday and hopes her mother will be able to make her favorite berry cake.
All measurements are approximate, as they have been converted from metric.
Kolac (Cake)
2.5 cups flour
1/4 cup sugar
7 Tbs. butter, unsalted
1/4 oz. baking powder
3 eggs
Combine all of the above ingredients and mix thoroughly. If dough becomes too thick, thin with a little milk. Using a 9" X 13" rectangular pan, press dough into pan, coming up the sides of the pan. Add fruit (use any whole berry, or rhubarb is good too) into the pan. Make a topping of: 3 or 4 Tbs butter, 1/4 c. flour and 1/4 c sugar; combine these ingredients until crumbly, sprinkle over the fruit.
Set oven to 350 degrees and bake until visible edges of dough are lightly browned. Approx. 40 to 50 minutes.
